*Preheat oven on grill to max temp
*Break up corn thins into 5-6 pieces each & scatter on a baking tin/tray
*Season & cook some beef mince (as much or as little as you’d like)
* Add cooked mince, mexican beans, salsa and grated cheese to corn thins, spreading evenly
*Grill in oven for approx 5-7 mins
*Top with fresh colourful produce such as diced tomato, avocado, corn and ten onion, and finish off with sour cream / greek yoghurt and a sprinkle of coriander
